Texas Longhorn BeefFor the health-conscious consumer, there is no reason to avoid tender, juicy steaks. Texas Longhorn beef has less calories, less fat and less cholesterol than chicken. For each 3.5 oz. serving (about the size of a deck of cards), Texas Longhorn beef has 114 calories, 3.7 gms. of fat (mostly unsaturated fat) and 48.0 mgs. of cholesterol, compared to 173 calories, 30.0 gms. of fat and 85.7 mgs. of cholesterol for chicken. Also, recent studies have shown that yield/grade, reflecting the leanness of meat, was a full grade better that of Hereford or Angus cattle because of the greater levels of polyunsaturated fat in Texas Longhorn muscle tissue. Due to the low fat content of Texas Longhorn beef, it cooks more quickly than other meats because it has less fat to insulate the meat from the heat source. As a result, it has less shrinkage and, when properly prepared, more flavor. At the Triple N Ranch, we pride ourselves on raising grass fed, “free range” cattle which we butcher for family use and for limited sale.

Including Lean beef in a heart-healthy diet can positively impact blood cholesterol levels. Studies have shown that eating lean beef can help increase "good" cholesterol and reduce "bad" cholesterol in people with elevated cholesterol levels.

Cooking Tips
1. Texas Longhorn beef cooks quickly due to its low fat content. Fat acts as an insulator so the heat must penetrate the fat before it begins to cook the meat. Therefore, the less fat, the quicker the cooking time. Be careful not to overcook it.

2. There is not much shrinkage in Longhorn beef. The cooked size is close to the same size you started with.

3. It is never necessary to cook Longhorn beef with additional fat. It contains just enough natural fat to allow it to cook to perfection.

4. To broil, position the meat 3-4 inches from the heat. Watch is closely while cooking to achieve desired doneness. Broiling slightly frozen steaks keeps them juicier.

5. A medium-hot fire works best for grilling. Add damp mesquite or cherry wood chips to the fire for an extra flavor. Remember, the meat cooks quickly so watch it cafefully.

6. Longhorn beef roasts should be cooked at 275 degrees F.

7. A meat thermometer is recommended to monitor desired doneness. Ground beef should have an internal temperature of 160 degrees F.
